Ingredients

  • BBQ Sauce 
  • Chilli Sauce
  • Mayonaise

Method:

The sauce can be customized as little or as much as you like, but for this recipe I used the ingredients in the following:

1 Part Mayonaise to 2 parts BBQ sauce. So put twice as much BBQ sauce than Mayonaise. The consistency should be dark. 

Put a few drops of chilli sauce in. If you like it spicer, then add more chilli sauce. I have used and Aussie chilli sauce, however you can use one from your country.

Mash the eggplant in a bowl and then mix the other ingredients together, with variations in salt, lemon juice, and tahini according to your taste. Drizzle olive oil, sprinkle some parsley, put some olives on the sides for presentation, and voila! Enjoy!

1 cup fresh baby spinach
1 cup fresh basil

  2. Place all the remaining hummus ingredients into a food processor. Pulse until the mixture becomes smooth.
  3. Observe the mixture, you may need to add a little amount of water if it’s too thick.
  4. Taste and adjust depending on your preference. Set it aside.
  5. Similar to the first few steps, put all the pesto ingredients into a food processor and run until smooth.
  6. Get a serving dish. Combine the hummus and pesto top it with the remaining chickpeas. You can add salt to taste and even chili powder.
